How to Make Holiday Individual Turkey Pot Pie

My family loves the holiday season when we get to gather around the dinner table to share our favorite dishes and recipes.  When I host holiday gatherings at my place, I always prepare a main dish while my family and friends would bring appetizers and side dishes to share.  It's always wonderful to share and create memories with my family through food!  If you can't tell by now, everyone in my family are foodies!  I guess you can say that the apples don't fall far from the tree!  This year, I'll be sharing these amazing Holiday Individual Turkey Pot Pies with my friends and family!




If you haven't done so, be sure to check out my video tutorial above.  This recipe is so much fun and so easy to make, yet its super festive and scrumptious!  Best of all, you can prepare them a day in advance.  Simply prepared the pies (without the egg wash), covered, and keep them in the fridge until ready to bake.  On the day of the party, simply brush the egg wash on the pastry and pop them in the oven before your guests arrive.  This way, you can join in and enjoy the party, too!  As much as I enjoy a holiday feast, I don't think anyone should, or wanted to, slave inside the kitchen for the holidays!  This recipe is a perfect solution for you if you are hosting a gathering for your friends and family this holiday season!  Think of how easy it will be for the upcoming Thanksgiving, Friendsgiving, Christmas, or New Years' parties!   



The flavors of these Holiday Turkey Pot Pies are so amazing that your guests would think that you've spent hours in the kitchen preparing them!  Thanks to the Better Than Bouillon Turkey Base, it adds a depth of flavor in the turkey pie fillings in a cinch.  It truly elevates and transforms the flavors of your ingredients.  You would feel like you're enjoying a traditional slow roasted turkey, but in a pie form, which is a lot more fun to eat than just a traditional roasted turkey (sorry Mr. Turkey!)  Rather than the traditional bouillon cube, the Better Than Bouillon Turkey Base is a paste, which makes it a lot easier to incorporate with the ingredients because you don't have to wait for the cube to dissolve.  The flavor is so concentrated that it won't dilute your sauce at all!  It's truly a flavor bomb, in my opinion!

Holiday Individual Turkey Pot Pie Recipe
Makes: 6 (8 ounces Pies)

4 tablespoons butter
1 yellow onion, diced
1 cup pumpkin (frozen, diced)
1 cup mixed vegetables (frozen)
4 cups roasted turkey (diced)
1 tablespoon sage (chiffonade)
1 teaspoon thyme
1/3 cup all-purpose flour (plus more for rolling puff pastry)
2 tablespoons Better Than Bouillon Turkey Base
2 cups turkey stock (low sodium)
3/4 cup heavy cream
2 sheets puff pastry (thawed)
1 egg yolk
1 tablespoon water
Cranberry Sauce (for serving)
Fresh Cranberries and Sage leaves (optional, for garnish)

Preheat the oven to 425°F.  In a large pot, melt butter over medium heat.  Stir in onions and cook until translucent, about 3 to 4 minutes.
Add in pumpkin, mixed vegetables, turkey, sage, and thyme.  Sprinkle the flour over the ingredients,  stir gently, and let the flour cook for 1 minute.  Add in the Better Than Bouillon Turkey Base and turkey stock.  Let the sauce cook until thickened, about 3 minutes.  Remove from heat and stir in the heavy cream.  Let the fillings cool off slight while you prepare the puff pastry.

Gently roll out the seams of the puff pastry on a lightly flour-dusted surface.  Place your ramekins up-side-down on the pastry as a guide.  Cut out 3 pastry per puff pastry sheet.  Repeat with the remaining puff pastry sheet.

Evenly divide the turkey fillings into the 6 ramekins.  Top each one with a cut out puff pastry.  Place the filled ramekins onto a foil lined baking sheet.  Whisk the egg yolk and water to create an egg wash.  Brush a think layer of egg wash onto each puff pastry.

Bake for 22 to 25 minutes, or until the puff pastry is golden brown and cooked through.

Let cool slightly before serving.  Be very careful, fillings is extremely hot.  Garnish with cranberry and sage (if using.)  Serve these Holiday Turkey Pot Pies with cranberry sauce and enjoy!

JACK O' LANTERN S'MORES SLIDERS

 Are you ready for Halloween?  Do you usually host or attend Halloween parties?  My family always attend a friend's Halloween costume party every year.  They went all out and decorate their house inside and out!  It's always spooktacular and fun!  My friend's Halloween party is usually a potluck style, so everyone brings a dish to share.  Since my friends know I love baking, they always assign me to bring a dessert or a sweet treat.  This year, I'm planning to bring this festive, yet super easy to prepare, and scarily delicious Jack o' Lantern S'mores Sliders to share with them.


My Kids are huge fans for anything with S'mores flavor!  After all, who doesn't love melt-y chocolate, charred and gooey marshmallows, along with the crunch of graham cracker, right?  My kids inspired me to create this Jack o' Lantern S'mores Sliders featuring King's Hawaiian's Original Hawaiian Sweet Rolls (#ad), which is something that I always have on hand.  They make a quick and convenience snack.  I also use them to pack kids' sandwich lunches as well.  Since these rolls are slightly sweet, they make the most delicious sweet and savory sandwiches as well.  They go well with so many dishes, in my opinion.



 


These S'mores Sliders are such a cinch to make, and they are so easy to serve too, which makes them the perfect party food.  You can easily grab and go!  No fuss, no mess! So, go check out my video tutorial above on how to make them!  To make these S'more Sliders more festive, I dress them up with some cookie icing and turn them into Jack o' Lanterns!  My daughter loves helping me in the kitchen especially when she can decorate and play with food! I guess the pumpkin doesn't fall far from its vine.

JACK O' LANTERN S'MORES SLIDERS:

1 (12 count) King's Hawaiian's Original Hawaiian Sweet Rolls
1/2 cup chocolate hazelnut spread
1 1/4 cup mini marshmallows
3 graham crackers
1 tube of black cookie icing
sprinkle of your choice
2 bread sticks (cut into 1 1/2-inches)
a few decorative toothpicks (optional)

Take the King's Hawaiian Sweet Rolls out of the package.  Cut the roll in half lengthwise (horizontally).  Reserve the top half of the rolls and set them aside.  
Place the bottom half of the sweet rolls in a baking tray.  Spread the chocolate hazelnut spread on top evenly.  Sprinkle the mini marshmallows on top in a single layer.  Toast the marshmallows 6-inches under the boiler for 1 minute.  Rotate the baking tray half way through.  Do not walk away from this process.  The marshmallows can toast up really fast. When the marshmallows are all charred up, remove the baking pan from the oven and let cool slightly.

Meanwhile, place the graham crackers into a zip top bag.  Seal it up and crush with a rolling pin. When the sweet rolls are cool enough to handle, transfer it to a serving platter.  Sprinkle the crushed graham cracker crumbs on top evenly.  Place the reserved top half of the sweet rolls on top.

Draw the Jack o' Lantern facial features onto each bun.  Decorate with sprinkles and stick a bread stick in between the buns to mimic the pumpkin stems.  Enjoy!

Mermaid Chia Seeds Pudding (Pitaya Dragon Fruit & Butterfly Pea Flower Tea)


Are you enjoying the Fall weather?  I'm loving the cooler temperature and the fact that I actually needed a jacket in the morning! If you've been following me on Instagram and my YouTube Channel, you probably have seen this Mermaid Chia Seeds Pudding that I shared a while ago!  Sorry for the delay in posting this blog post and recipe.  The weather was still super hot when I created this recipe!  But nevertheless, it's still a delicious recipe, even in this Fall weather.   




Check out my YouTube video tutorial above, if you haven't done so.  You'll see this gorgeous Mermaid Chia Pudding is really easy to put together.  You can prepare it the night before and it's ready for you in the morning as breakfast.  But I personally enjoy this as a quick snack or "dessert" in the afternoon more than as a breakfast item.  Yes, it's sweet enough as a dessert, yet it's still healthy and good for you.  The pink bottom layer is make with whole milk (you can substitute with almond milk, or soy milk if you like), Chia Seeds, a touch of honey for sweetness, and this gorgeous Dragon Fruit Powder that makes it pink.  It's packed with vitamins and anti-oxidant!  I'll list the product link at the end of the post for your reference.   





The upper blue-ish and purple-ish layer is made from Butterfly Pea Flower tea. It's also a vitamin and anti-oxidant rich ingredient that will make you feel beautiful from the inside out after enjoying it!  I love pretty food that also have such health benefit.  But since I'm not a doctor or nutritionist, please don't hold me accountable for that.  You can google it and read more for yourself if you're interested.  The original color of the Butterfly Pea Flower Tea was blue.  After adding the honey, it changed to this gorgeous purple-ish color because of the acid.  





October is Breast Cancer Awareness Month.  I'll be wearing pink this month to raise awareness.  Hm....maybe I'll share more pink food and recipes too!  If you want to read more about Brest Cancer Awareness Month, here's the post that I shared last year:

How to Fold Christmas Tree Napkins – A Festive Holiday Tablescape and Place Card Idea



Are you ready for the holiday?  If you’re hosting a Christmas party this year, I have a wonderful tablescape and place card idea for you.  I promise, it’s quick, easy, and festive!  After all, we don’t want to spend all day fixing/setting the table while we have a feast to prepare, don't we?  On a side note, my kids are into origami (art of paper folding) and therefore they totally enjoyed folding these Christmas Tree Napkins.  So, you might want to put your little helpers to work as well!  Yes, it’s so easy that kids can do it too!

See how festive this table setting is?  In addition to the visual, I wish you can smell it too.  Because I added a cinnamon stick to mimic the tree trunk and the whole plate simply smells wonderful.  I think cinnamon is one of my favorite aroma for the holidays!  It’s warm and earthy.  I feel so relax and calm sniffing it in!

I tied a little bow tie with Christmas colored ribbon on the cinnamon stick (or you can use kitchen twine as well) so that your guest can take it home and hang it on their Christmas tree after the party!

How to create a 3D Winter Wonderland - Classic Sugar Cookies with Royal Icing



Are you ready for the holiday baking season?  Traditionally, I have always been busy baking goodies for friends and family during the holidays!  What are your favorite things to share around the holidays?  This year, I have created these whimsical 3D Winter Wonderland Sugar Cookies.  Be sure to check out the tutorial above on how I make them.

These 3D cookies are made out of Classic Sugar Cookies and decorated with Royal Icing.  Not only these cookies are crispy (with a hint of butter and vanilla), they are also more sturdy and can hold up to the decorations better than other kind of cookies.   According to my Little Girl, these cookies are perfect for dunking in a cup of hot cocoa! Does she talk like a foodie or what?!  In addition to these Classic Sugar Cookies, I also made a variation of a chocolate flavored ones.

In this 3D Winter Wonderland, you will find Christmas Tree, Snowman, Reindeer and Santa’s Sleigh that are all made of cookies.  As shown in the video above, they are cut from from a 3D cookie cutter set that I bought online from awhile ago.

In addition to Snowman and Christmas Trees, I also created a few gift box/present cookies to place in front of the Christmas Tree!  We’ve got to have some presents for the holidays, right?  The great news is that you don’t need a cookie cutter to make these gift boxes.  Check out my video tutorial and I’ll show you step by step on how to make them.  They are easier to make than they look, and they are super delicious with a layer of chocolate sugar cookie stacked in the middle!

How to Make Baked Apple Hand Pies 蘋果批 (餡餅)



Are you enjoying the cooler temperature and the scenery of fallen red and golden Maple leaves?  I sure love them both.  But what I love even more are all the warm and hearty recipes that fit for Fall!  There should be no surprise that dessert always makes the top of my list!  These adorable and heart-warming Apple Hand Pies are definitely my favorite Fall dessert.  They are also both of my kids' favorite!  What a surprise!?  It’s seldom that they both love the same item or a dish!  So, I’m happy to bake up these cuties more often!

Many hand pie recipes are deep fried.  However, I don’t like to deep fry for obvious reasons.   To me, deep fry usually involved absorbing too much unnecessary oil and calories!  Besides, I don’t want to deal with a large pot of left-over oil and greasy smell in the kitchen as well.  So, I opt for a baked version!  These baked Apple Hand Pies are just as scrumptious and decadent, if not better, than the deep fried version!

The crust of these Apple Hand Pies is buttery and flaky, the apple filling is slightly sweet and tart, and very juicy.  The combination of earthy cinnamon and refreshing apples is simply heavenly!  These hand pies are fun to eat and very portable.  You can easily pack them for picnic or bring them to parties for sharing.  I shared them with some friends and they all loved them!

How to Make Creepy Eyeballs Halloween Brew – Kids Friendly Party Recipe 鬼異眼球萬聖節特飲




Will you be hosting a Halloween party this year?  If you do, you’ve got to check out this Creepy Eyeballs Halloween Brew Recipe 鬼異眼球萬聖節特飲!  When I tested out this recipe with my kids, they were so excited and had so much fun with it!  Yes, this is a kids friendly recipe.  But if you want to turn it into a cocktail for the grown ups, you can add 1/2 a cup of liqueur of your choice, such as vodka, tequila, or gin.  Or, simply substitute the club soda with some sparkling wine.  It’ll be just as delicious!

In today’s recipe, I added some dry ice for the smoky and spooky effect.  It’s so much fun to use and it’s simply amazing.  It totally transformed the drink and took it to a whole new level.  The dry ice is actually easier to obtain and more affordable than I thought.  I was wondering and googling where to buy the dry ice.  Turned out, it was available in several local supermarkets near me.   If you plan on using dry ice in your drinks, I suggest that you call your local markets to make sure they have it in stock before driving there.

I kept the dry ice in an insulated ice chest as suggested by the packaging (do not keep in the freezer or a closed environment as the dry ice will release carbon dioxide when it “melts”.)  I highly recommend that you get it right before or a couple of hours before the party if you plan to use it.   And make sure you follow the safety instructions on the package.

Ever wonder what dry ice is made out of?  Dry ice is the solid form of carbon dioxide.  It sublimates at –109.3F.  With its extremely cold temperature, we need to handle it with cautions and never touch the dry ice with your bare hands as you might get frostbite!  I was wearing gloves and using tongs when I had to add the dry ice to my drinks.  Don’t worry, the dry ice is totally safe!  Because of its heavier weight, the dry ice immediately dropped to the bottom of the glass/punch bowl.  Just make sure to sip your drink slowly so the dry ice is all melted by the time you finish your drink.  And it mostly will.  And please refrain yourself from getting the dry ice inside your mouth because it can burn your skin/mouth!

Moving on to anther ingredient of this drink, the creepy eyeballs!  They are made out of canned lychees filled with fresh blueberries.  Lychee is one of my favorite tropical fruit to enjoy (check out this lychee martini recipe that I shared in the past and see how they look when they're fresh).  With a little bit of grenadine syrup added to the lychees, they sure looked like bloody eyeballs!  I’ll list the ingredients used at the end of the post for your convenience.

How to Make S’more Ice Cream Pie



Yesterday marked the first day of Fall!  The weather has been comfortable and mostly cooled down.  But it’s still nice and warm in the afternoon so my Kids are stilling craving for cool desserts most of the time.  The solution?  This scrumptious S’more Ice Cream Pie!

S’more is one of my Kids’ favorite treats.  I don’t make them too often, so it remains as a special and occasional treat for them.  But before I am ready for the cozy campfire and traditional S’more, this S’more Ice Cream Pie is the best transitional treat in between the Summer and Fall.  It combines the best of both world with the comforting gooey and charred marshmallow on top as well as refreshing ice cream filling.  Plus, who doesn’t like magic chocolate shells and chocolate graham cracker crust?  Yes, these are all the components of this pie.  The perfectly sinful and delicious combination, all in one easy-to-prepare pie!  If you haven’t watch the video tutorial above, please check it out.  You’ll agree that this pie is super easy to put together.

This recipe calls for a total of 3 cups of softened vanilla ice cream.  You can use homemade ones or store bought ones.  However, when I was making this pie, I realized that I didn’t have enough vanilla ice cream while preparing for the 2nd layer!!!  As much as I prefer my homemade ice-cream recipe over store bought ones, I also didn’t want to drive to the store for just 1/2 a cup of ice cream!  So, I improvised and substituted with coffee ice cream instead.  It turned out quite delicious with a more complex of flavor.  Next time, I’m going to try with a layer of chocolate ice cream as well!  So, by all means, explore and experiment with different flavors of ice cream when you make this pie!  Just like everything else in life, we need to learn to be flexible.  My new motto of the week, “Keep Calm and Eat Pie!”

How to Make Hawaiian Buns (Tang Zhong Method) 夏威夷麵包-湯種法



Do you love Hawaiian Buns?  My family is a big fan of these buns!  Today, I want to share this homemade copy cat recipe with you.  After several recipe testing, I have finally ended up with this amazing recipe that our family absolutely loved!  The verdict?  We all agreed that my homemade version is way better than the store bought ones!  After all, it’s quite difficult to beat freshly baked buns that are still warm right out of the oven.  This is especially true since these buns are made with all natural ingredients and packed with amazing sweet aromas!  When you bake these buns, your whole house would smell amazing, like a bakery.  As my Son puts it, these buns are simply irresistible!

If you had been following my blog for a while, you probably know that I like making bread and buns with the Tang Zhong Method 湯種法.  This Hawaiian Bun recipe is no exception.  Tang Zhong Method is a bread making method that involved a partially cooked dough added into the main bread dough.  This method yields the most amazing soft and fluffy texture of breads and buns.  The most amazing part is that the softness will last for a few days (that is if you haven’t finished these buns by then!)  You can read more about the science behind the Tang Zhong Method by clicking here

For the unfinished portions, simply wrap them tightly in plastic wraps.  To reheat, simply unwrap the buns and heat them up for a few seconds in the microwave.  They will be warm and soft just like they are fresh out of the oven!  If you haven’t try the Tang Zhong method of making bread, I highly recommend that you give it a try.  Once you have done it, you would not go back!

To give these Hawaiian Buns their tropical flavor, I used pineapple juice in the bread dough.  They are slightly sweet because of the brown sugar and vanilla extract.  There’s no egg in the bread dough, but I added some custard powder to give these buns a hint richness of egg aromas.  I used custard powder quite often in a few of my other recipes.  It’s a more common ingredient in Asia countries.  Unfortunately,I haven’t seen them in the local supermarkets in the States yet and I always have to order them online.  I’ll list the ingredients and tools used in this recipe below this post for your convenience.

Although these Hawaiian Buns are just perfect the way they are, they are even more irresistible if you put a little butter and let it melt in the middle!  Each bite is simply heavenly!  If you are a Hawaiian Buns lover, you’ve got to give this recipe a try and thank me later!  After trying this recipe, you’ll never go back to the packaged version!
