Pimento Cheese Recipe

Pimento Cheese

I thought I would share this recipe for Pimento Cheese with you this Labor Day Weekend. It is a staple in most Southern kitchens. Every women in my family makes
it and every recipe is delicious. My 
mother and cousin Barbara are probably 
the reigning queen's of Pimento Cheese.
My youngest son makes a mean Pimento 
Cheese,also.

Cherry Peppers or Pimentos

First I want to talk about what is a
Pimento? It is a Cherry pepper. It is 
very mild and sweet. Very low on the hot
scale. I buy them in the jar. However, you
can make your own by buying the peppers and
preparing them. Just saute them and slice them up. 

My recipe is:

2 cups of shredded extra sharp cheddar cheese
1 8 ounce package of cream cheese, softened
1/2 cup of mayonnaise
1 4 ounce jar of diced or sliced pimentos, drained

Okay that is the basic recipe. Now you can add all sorts of stuff according to your taste. I am giving you what I add to make it delicious.

1/4 teaspoon of garlic powder
1/4 teaspoon of onion powder
1/4 teaspoon ground cayenne pepper
a dash of Worcestershire sauce
salt and pepper to taste.

Once you have assembled your ingredients put them all in a large bowl. Take your mixer and mix on medium to combine all the ingredients. Salt and pepper to taste.
Refrigerate to set up around a half hour or so. 

Now you have made your Pimento Cheese you can decide how to eat it. There are so many ways. You can serve it as a dip with crackers. Here in the South we like it as a sandwich spread. Two pieces of white bread, spread on the Pimento Cheese. I like my crust cut off. Or, a grilled Pimento Cheese for breakfast or lunch is delicious. 

Into the dinner hour, Pimento Cheese makes a great stuffing for chicken breast. Slice them open, put in a spoonful or two of Pimento Cheese. Close with a toothpick or string. Brown chicken breast in frying pan then put in a baking pan and bake till chicken is done. Delicious. 

Don't forget Pimento Cheese and your burgers. It make a wonderful topping. Or you can fill your burger with Pimento Cheese, grill, add a thick slice of tomato and have a truly gourmet taste treat. 

Of course there is the BLT with Pimento Cheese, either grilled or not. Did I mention Pimento Cheese spread on an English Muffin with your favorite egg on top? The list goes on and on. Truly a versatile and staple to any kitchen. Enjoy.

Ham & Apple Pancakes


Ham & Apple Pancakes

Thought I would share a recipe with you today. It has been quite awhile since I have shared one with you. This one is easy and tastes delicious! Great for when you
have guests and want something that does not
take up too much time. Plus, it tastes really good and everyone will ooh and awe over it.
 
Ingredients
 
1 can of apple pie filling/21 ounces
2 cups of Bisquick Original Baking Mix
1 cup milk
2 eggs
3/4 cup fully cooked ham chopped into pieces
1/2 cup of shredded cheddar cheese/2 ounces
optional -
1 medium green onion sliced thin about
2 tablespoons
sprinkle of cinnamon
 
Directions
 
1. Heat pie filling in saucepan till hot,
keep warm.
2. Mix Bisquick, milk and eggs in a bowl.
Beat with a wire whisk or beater till smooth. Fold in ham, cheese, and onion.
3. Heat up griddle to 375 degrees or a skillet on medium heat. Grease griddle and or skillet with a tad of butter if needed.
4. Pour batter by scant 1/4 cup fulls onto hot griddle or skillet. Cook till the edges are dry. Turn, cook till golden brown.
5. Serve with warm apple pie filling on top with a sprinkle of cinnamon.

Recipe - Naked Chicken



The weather is starting to get warmer and I am seeing lots of people out walking and exercising. Getting ready for swimsuits. This recipe is a good one for those dieters out there - me included. I serve this with a wild rice and some broccoli or asparagus. It is an easy meal to prepare on a busy day. You can start the marination before you go to work in the morning.

Naked Chicken

1/2 cup soy sauce
1/4 cup oil
1 Tablespoon brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
4 chicken breasts, skinned

Mix together the first five ingredients.
Place the chicken in a ziplock or plastic bag and pour in the marinade.
Refrigerate the chicken in the marinade for 4 to 24 hours. The longer the better.
Turn the bag whenever you can.
Remove the chicken and place in baking pan.
Bake covered at 350 degrees with foil for 40 minutes.
Remove foil and bake another 20 minutes.

Serve on top of wild rice with some fresh vegetables - I use asparagus or broccoli. Yum!
Serves 4 hungry people.

Overnight Chicken

The New Year is here and one of my resolutions is to eat better. So in keeping with that premise I am starting off with this recipe for this week. It is called Overnight Chicken. Very easy and quick. This is something to make when you know you are going to have a hectic day the next day. This can be served on top of rice, noodles, or with roasted potatoes. I am eating this on top of a fresh salad. Some yummy greens, avocado, and a maybe some of those dried cranberries I have left over...

1/2 cup honey
1/3 cup Dijon mustard
1 tablespoon curry powder
2 tablespoons soy sauce
4 chicken breasts

Mix the honey, mustard, curry powder, and soy sauce.
Place the chicken breasts skin side down in baking dish.
Pour the marinade over chicken breasts.
Cover with foil and marinate in refrigerator overnight.
When ready to cook - turn chicken breasts over, put in UNPREHEATED 350 degree oven, covered with foil.
Bake at 350 degrees for one hour; after one hour, remove the foil, baste the breasts and cook 15 to 20 minutes more uncovered.
Spoon sauce over chicken when serving.

While the chicken is cooking you can change, start rice, and or make the salad. Then relax with a wonderful meal.
