Two Lemon Poppy Seed Cakes



Do you still remember those days back in primary school where we had to learn all about the 5 human senses in science class?

There's the sense of touch, smell, sight, hearing and of course taste.

I was one of those students who would stop to think of how miserable it'll be to be lacking from one or two of those senses. A discussion of whether it is worse to be blind or deaf would then ensue.

Funny how we didn't discuss the possibility of being deprived of the remaining 3 senses. But now when I think about it, I believe I would probably be crushed if I had lost my sense of taste.

You would know. You read my blog and you are well aware of how much I love food. I enjoy my sense of taste. I truly appreciate my ability to taste and differentiate between sweet, sour, salty, spicy and bitter. But it's weird though, when I think of it now. How often do we stop to think of this amazing organ of a tongue we have. Not only does it enable us to speak but also to taste.

Why am I suddenly ruminating about the sense of taste? It's probably also due to the fact that I'm currently reading this book by Dina Cheney, entitled Tasting. Okay it's one of those enlightening informative DK books but it's really good. My boss lent it to me a while ago and it sure is useful. The book basically explores the sense of taste and how we can enhance it, truly appreciate it and utilise it for what it's worth. To put it simply - savour, instead of gulping or swallowing ; take your time with small bites instead of rushing.

These days, I try to stop and taste more. To slow down instead of gobble. Trust me, it does work and you'll feel better about it. When you taste, you avoid senseless eating. You eat not because you are bored but because you want to savour that taste. And speaking of taste, perhaps I'll talk about one of my favourite taste - Tangy.

I love tangy foods. It verges on being sour and a tad sweet, it gives you the best of both worlds. It's the perfect balance! And one of my favourite tangy dessert is lemon poppy seed cake. The bonus is the crunch that comes with the seeds. You can't ask for anything better! With this cake there's no pretense, there's no cover-ups and there's no superficiality. What you see is what you get: a tangy light cake that goes well with tea. or coffee if you prefer :)

Recently, I put my poppy seed stash to good use and tried out two different recipes for good measure. The first involves heavy cream for that lovely rich crumb that's not too heavy. Then there's the other recipe that involves yoghurt - this cake was denser, but tasty nonetheless.

I stumbled upon this recipe while reading Greedy Goose last month.

This cake is what I'll call a rustic cake. It's not fancy, there's no frills - what you have is texture, and a homemade flavour. I've tried other poppy seed cake recipes but none have given me results quite like this one. The base recipe's usually a butter cake but there's always something missing. And I think I found it in this recipe.



For this recipe, you don't put the lemon juice in the batter. It goes on after you bake it. Yes, you read that right. The cake becomes a sponge, absorbing the tangy goodness and drinks it up like a dry sponge would. I think this method works brilliantly.

Friends who've tried this cake seem to like it. Good, so that means it's not that I'm being biased because I made it! haha.

Now, for the yoghurt version. It all started because I had a huge tub of yoghurt at home and wanted to use it to make something. So I started googling 'yoghurt cake'.

The results?

I'll show it instead:








You can see the difference. It isn't as crumbly as the first one, but it's satisfying nonetheless and yes it's healthy! Perfect with vanilla ice cream.

Lemon poppy seed cake is one cake that deserves more recognition. With warm chocolate cakes and brownies stealing the limelight most of the time, it's hard for poppy to stand out. But hey, at least one thing's for sure, it sure is tasty, in a tangy crunchy sort of way.

This year, I will focus more on rustic and non-chocolate :) You could say I'm exploring taste and taking it to a new level. Don't get me wrong - I still love my dark chocolate. But sometimes, you got to go out there and taste the world, out of your comfort zone!

And that's just what I'm going to do.

Lemon & Poppy Seed Cake
(Adapted from The Cake Book by Tish Boyle)
from Greedy Goose.

200g sifted cake flour
1/4 tsp baking powder
1/4 tsp salt
3 tbsp poppy seeds
227g unsalted butter, softened
240g granulated sugar
4 large eggs, at room temperature
1 tbsp lemon zest
1 tsp vanilla extract
1/3cup heavy cream

For the syrup:
1/3 cup sugar
1/4 cup water
1/3 cup freshly squeezed lemon juice

1. Preheat oven to 150 degrees C. Grease the bottom and sides of a loaf tin and dust with flour.
2. Sift the flour, baking powder and salt into a bowl. Add the poppy seeds and whisk to combine.
3. In the bowl of an electric mixer, beat the butter with a paddle attachment till it is very creamy, about 2 mins.
4. Add the sugar and beat at medium-high speed until very light, about 4 mins.
5. Add the eggs, one at a time, beating well after each addition.
6. Beat in the lemon zest and vanilla extract.
7. Add the flour at low speed in three additions, alternating it with the cream in two additions. Mix only until the flour is incorporated.
8. Scrape the batter into the prepared pan and smooth the top.
9. Bake for about an hour or until a skewer inserted comes out clean.
10. Remove the pan from the oven and let it cool on a wire rack for 10 mins.
11. While the cake is cooling, make the syrup.
12. Combine the water and sugar in a small saucepan and cook over medium heat till the sugar dissolves.
13. Remove from the heat and stir in the lemon juice.
14. Poke the cake all over at 1-inch intervals with a bamboo skewer and then brush it with half the lemon syrup.
15. Let the cake stand for 5 mins, then invert the cake onto the wire rack and poke the bottom all over with the skewer.
16. Brush the bottom and sides of the cake with the remaining syrup.
17. Turn the cake upright on the rack and let cool completely.

French Style Yogurt Cake (with Lemon & Poppy Seeds)
from Alpine Berry who adapted Orangette's recipe.


Cake
3/4 cup plain yogurt
1 cup granulated sugar
1 tbsp finely grated lemon zest
3 large eggs
1 1/2 cups all purpose flour
2 tsp baking powder
1 tbsp poppy seeds
1/3 cup canola oil

Glaze
1/4 cup freshly squeezed lemon juice
1/3 cup powdered sugar

Preheat the oven to 350F. Butter a 9-inch round cake pan. Line with a parchment circle and butter the paper.

In a large bowl, mix the yogurt, sugar, and lemon zest with a wooden spoon. Mix in eggs (all 3 at once is okay).

Add the flour, baking powder, and poppy seeds. Mix until flour is just incorporated.

Add the oil and mix well. The batter will look curdled at first but it will come together.

Pour the batter into your prepared pan.

Bake at 350F for 30-35 minutes, until your cake tester is clean and the cake springs back when lightly touched.

Allow cake to cool in pan on a rack for about 15 minutes.

Gently remove cake from the pan and set on a rack to cool completely.

Combine the lemon juice and powdered sugar and spoon it gently over the cake. The glaze will be thin and will soak in like a syrup.

My simple, sweet and spicy birthday



I'm a lucky girl, a very happy, satisfied and contented girl who turned 23 yesterday.

So lucky that I ended up with a huge 2kg carrot cake to eat all by myself and that's just what I did.

You know what people say about girls who turn 23? Their appetites grow too and so does their mouths.

That's what happened to me. I made my way through the entire 2kg of carrot cake and ended up with a very happy belly.

And then something interesting happened....

you won't believe me...

a carrot grew out of my ear...

hahahaha!

Sorry but I really couldn't help it! Just feel like being silly. Somehow, I think turning 23 is kinda fun - you don't feel too old and you don't feel any younger. I feel the same actually. Maybe wiser and taller than I was at 13? Duh! heh.

But hey, I wasn't lying about the 2kg carrot cake.

The lovely people from Calendar sent me their carrot cake because they had read on my blog about my love for carrot cakes. Apparently their carrot cake is one of the best and I got to try it first hand. My verdict? Darn right they are... those people who rave about their cakes. It's made the typical American way; and owned by an American, no less.



Their carrot cake is moist and chockful of walnuts and raisins; even the cream cheese frosting is delish.



It has only been a day but the cake is slowly disappearing. My family loves it. I had some again for breakfast this morning. They taste really good warm.



I popped mine in the microwave for a while and it's superb. Heard that their apple crumble and apple pies are to die for. Cannot wait to try them!

So you must be wondering what I ate for my birthday? haha...

Hear this... I had dessert first before having my dinner. :p

Hey, I'm sure you're not surprised! My sis and I were in town and simply couldn't decide what to eat. It's Singapore remember? The food paradise and for me, when given too many choices, I get rather fickle...

We went to Paragon to check out Canele because I had heard alot about it and wanted to check out their macarons (i'm in a total macaron craze right now). Their macarons were sold out though. But we shared a slice of black forest and gateaux chocolat.



Oh my, I tell you the cakes were splendid. Check out the gold foil:



Haha I feel like a queen after ahem eating that bit of gold foil.

Anyway this cake had whole cherries and the cake has kirsch. You should have seen the look on our faces!

The chocolate cake was even better. It was flourless I think.



Simply gorgeous. That's how I'd describe it!

We were so happy with dessert that we walked out of the place with huge smiles.



What about dinner you ask. Haha... we had pasta at Bakerzin. I had the Aglio Olio and sis had the cream mushroom pasta.

The aglio olio had 6 whole chilli padis.

Can you guess what happened to them?

5 ended up in my brave mouth.

Yea, don't you know what a spice queen I am?

But erm, I won't advise you to put all 4 in your mouth at one go. It's dangerous. Trust me. I had a whole spoonful of my sister's cream sauce and it wasn't enough to douse the fire. Tears were trickling down my face. It was seriously fiery but hey, it had that certain kick that I really dig. I'm a daredevil don't you know :D

And so, that's how my birthday went - simple, sweet, and spicy... just the way I like it.

Dad's Cedele Birthday Cake!



Dad turned 58 last Sunday and what better way to celebrate than with a cake from my favourite bakery depot!

Stop rolling your eyes! I can see you... I know what you're thinking. haha. It was indeed a good excuse to buy an entire cake from Cedele. Bro and I thought it'll be a nice gesture + I convinced him that the cake was delish!

Since I've been eating so much of their chocolate cakes, I told my bro to get the Carrot Walnut Cake. At $48, it was fairly reasonable, seeing how big the cake was!




That's why I love Cedele! Their cakes are huge and full of good stuff. Check out the carrots and walnuts man...



Everyone loved it. I think Dad liked it. Well he doesn't have much of a sweet tooth but he did have a slice! I totally dig the walnuts by the side. This is by far my most favourite carrot cake. I don't think I've tasted any better.

Speaking of cakes, I've also tried this other cake place at Katong but that's for another post.

Today, it's all about Dad's Cedele Birthday Cake! Thank you Cedele for baking such glorious cakes. I know for sure, that my birthday cake will be a Cedele too.

Or.. hahaha, anyone thinking what cake to get me for my birthday (coming soon. hahahaha :p) can get me a Cedele! Gosh, how thick can my skin get?

Nah, I'm simply kidding. I might be baking my own cake this year. Speaking of which, Cocoa & Butterscotch has something up our sleeves to celebrate our birthdays, but that's under wraps, for now!

Oh and Dad, if you're reading this (hopefully!), Happy Birthday once again! I love you! You're such an amazing cook and I wanna learn how to cook all those delicious Peranakan dishes! :)

Cakes with substance



Just a while ago, I posted about Cedele Depot's cakes and raved about them like mad.

I was sorry I didn't have pictures the other time and now, each time I visit them, I make it a point to snap some shots and as promised, here are the cakes, in all their glory.

Now you know why I think they have substance.

Seriously, if I could really choose any place to have cakes all my life, I'd definitely pick Cedele!

Yesterday I had their Apple Oat Cake (pictured above) and it tasted great with coffee. It did help that it was healthy - not sweet at all. My favourite part was the apple slices and the oat & walnut streusel on top. Crunchy and tasty, I love.

Seems like I cannot run away from Cedele. I have to go pass their shop everytime I'm near one. It's become so much of a habit that most of the time I do end up buying something.

Take the Old Fashioned Granny Apple Pie for instance. I was simply looking at the glorious offerings of scones and cakes when I chanced upon this beauty:



Looking good and yummy, I felt it calling out to me, so yes I had a slice. No regrets. Warm and chockful of apples, this pie gives you a warm feeling. It was as if my grandma made it for me. Awww...

And then there are those sins:



Like this Chocolate Truffle Cake. Super rich and super divine, this cake rocks my socks but I can't eat it all by myself. Have to share, unless I use it to replace a meal.

Cedele has a knack for exploring flavours and here are two cool cakes that I think deserve 2 thumbs up not only for their creativity but combination of flavours & textures:



Orange and Apricot cake. Love this one. You can actually taste both in a slice! See, they do mean what they say and say what they mean these Cedele peeps.

Okay this one might look standoffish because of its black colour but really, it tastes so good! It's Sesame Cake with Tahnini Frosting:



Loved the fact that they topped it with cranberries (my fav!)

Man... Cedele should come up with like a loyalty programme! :)

I do hear sounds of unison from Cedele fans!

Delicious Weekender




My weekend has been busy busy busy.

My ministry (Amplify) had our prep camp for the coming YISS (14-17 June) and I was heading the F&B team. Tiring but fulfilling nonetheless. Slept for a total of 4 hours throughout the weekend!

But I'm wellrested now. Slept damn early last night. And speaking of weekends, I have something cool to share with you.

My recent online discovery is an online bakeshop that sells homemade cakes. Known as the Delicious Weekender, this homely cake business is the brainchild of a daughter who's eager to let everyone have a taste of her mum's baked goodness.

They sell anything from fruit cake to brownies, sugee cake and marble cake.

I had a chance to try out their fruit cake and I kinda like it.





Flavourful and packed with fruits, it wasn't too sweet. But I think it could have more liquer. Hehe..

There's also their gingerbread cake. It looked really good with its deep dark brown.






Love the subtle taste of molasses and slight hint of ginger. The texture was just nice - not too heavy. Good to have with tea.




Their marble cake was delicious and light.

The thing about their cakes is that they're not really sweet, which is cool. It allows the natural flavours to come through.

Marble cakes though easy to make, is hard to get right and though I like the taste, I think the texture could be better. It was more on the dry side. Marble cakes should be moist at most.

But if it's any consolation, I loved the mix of vanilla and chocolate in the marble cake :)

Cedele Depot

Promised to post about Cedele Depot using nothing but words and I shall.

Funny though - everytime I eat there, I fail to take a photo before eating the food. There's only one explanation. Haha, I've eaten there about 4 to 5 times in the past few weeks and it's always dessert; never sandwiches or salads. I've been a bad bad girl - been eating too much junk!

Maybe that's why I'm sick now! Yea, got the flu bug from lil sis. Being sick ain't fun. So here I am, cheering myself up by going into details about the fantabulous cakes & pastries at Cedele. Hey, it's my way of therapy. hahaa...

So... back to the lovely treats at Cedele. My my, I can't stop raving bout their cakes to everyone I meet. Don't believe me, ask my friends :)

Yep, this is me - I am always eager to share good food and I get really excited when I come across something that I know I just have to tell the ahem whole world about. Don't be alarmed by my excitement, it comes from my deep rooted passion and belief that everyone is entitled to good yummy food!

All right, enough digression. Back to the cakes. I'll go through the ones I've tasted one by one!

The cake that literally blew me away was their Chocolate Banana Espresso Cake. I'm one of those people who think that chocolate and banana make a perfect couple. There can be no beautiful and delicious match on earth. Well aside from chocolate and hazelnut (think Nutella) that is. So what's so gorgeous about the cake? There's just a right amount of chocolate and banana. The sweet caramelised bananas are layered in between soft chocolate cake and my oh my, it's topped with some amazing espresso chocolate frosting BUT that's not all. You know what I love about this cake especially? Their crunchy topping - oat and walnut strusel. It just packs a punch, and heightens the whole chocolate banana cake experience. Now now, I could go on and on and on but I think I'd want you to taste it for yourself. Ahhh I'm dreaming about it right now. If only I had a slice in front of me. I'd so gobble it up!

I don't mind having every slice of their cake in front of me right now actually. That'll be the ultimate heaven! Give me a slice of Chocolate Pistachio Cake and Chocolate Truffle Cake too - it's pure bliss. Both cakes are truffle types. Okay the thing about truffle cakes is that they're really rich and dense. Why? Because they're made with cream and hardly any flour (maybe only a tablespoon). Yep, it's pure, unadulterated chocolate with some simple ingredients and it really kicks ass. So the Chocolate Pistachio Cake uses almond pistachio sponge made out of egg white and the chocolate truffle layer alternates. So it's sponge, then chocolate truffle, sponge then chocolate truffle - I'm sure you get the gist. Yum yum, I love the pistachio topping as well. I think the sponge goes very well with the truffle part. And then there's the pure Chocolate Truffle Cake. Now this one is meant for serious chocoholics. Please don't ever try it if you don't really like chocolate or just don't fancy feeling like you've eaten 3 bars of chocolate. It's highly rich but heh highly satisfying. Each forkful feels like a step toward heaven - my chocolate heaven, the place I hope to end up in when I die. hahaha.. yea RIGHT. Maybe I will be able to swim in a chocolate pond not unlike that in Willy Wonka's Chocolate Factory! hahahaa..... But I want it to be made out of Valrhona chocolate please? Pretty pretty please!

Wake up Cheryl! Fancy you dreaming of chocolate when you're sick. Man, you gotta get your head fixed. Hey... I can't help it - it ain't my fault that I love chocolate this much ya know.

Okay, one more rave about another chocolate based dessert - the Chocolate Hazelnut Blueberry Roll. This was like a swiss roll with blueberry cream made using real blueberries. There were bits of hazelnuts in the cream too. The sponge was chocolate and I must say, this entire combination is really refreshing and delicious. It's like a light fluffy walk through a blueberry plantation (if that's what its called! pardon my ignorance!). Love this.

Lemon Meringue Pie was pretty good except that I didn't really like the meringue because it was too sweet. But then again, meringue has to be sweet and it's sweet because it's meant to complement the tartness of the lemond curd filling. Ooooo I adore the lemon filling - told ya I love sour tangy foods! I think they have a Banana Meringue Pie as well - but I've yet to try it.

Oh oh, if you're looking for something not chocolate and something not so heavy to enjoy with your coffee or tea, you've got to try their Raspberry Almond Scone and Apple Berry Crumble Pie. The scone was a complete dream. Dusted with toasted sliced almonds and confectioner's sugar, complete with a hint of raspberry jam, this huge scone makes for a very satisfying tea time treat. I love the texture. This is how scones should be like - not too dry and not too wet either. It goes very well with a hot drink (I had mine with coffee). The Apple Berry Crumble Pie is another wonder. The pie was sweet yet tart and the colour was oh so pretty. A dark rose maroon - you know what they say, pretty foods don't always taste so good? I guess they were wrong this time. Anyway I love crumbles and I love pies so I think this was a really great combination. Ahhh I love this pie so much! I think it'll taste great with Vanilla Tea. Mmmmm....

Wow, I've raved quite a bit about Cedele Depot. I know, it sounds as if I'm writing an advertorial! But seriously, I am a great fan of their food (desserts especially...ahaha) and I'm just so drawn to their healthy food philosophy. They are trans-fat free by the way. Their cakes are made using unsalted butter or cold pressed extra virgin olive oil and organic unrefined sugar. They also bake their cakes using fresh farm eggs. They make their cakes fresh daily.

BUT the one thing I love about their cakes is that they're completely unpretentious. Go walk pass one of their outlets and I'm sure you'll get what I mean. Their cakes speak for themselves. They don't decorate it much because they don't need to. Substance is there, it's the 'rawness' of their desserts that I can't get enough of. What you see is what you get - good quality cakes with great taste. The cakes are big and solid as well! Man oh man, if I'm too lazy to bake my own cake during my birthday, I'll definitely get one of theirs.

Cedele Depot - keep up the excellent work! By the way, they've been around for 10 years now. Amazing huh? I'm not surprised! After all, they've got the goods.
