NOVEMBER IS WINDING TO AN END ~ WHERE DID THE YEAR GO? (SWEET AUTUMN SALMON ~ ROASTED BRUSSELS SPROUTS, SWEET POTATOES & CRANBERRIES)

SWEET AUTUMN SALMON ~ This fish is good! 2  lbs. salmon fillet 1  Tbsp. sweet butter 1  Tbsp. honey 1 Tbsp. brown sugar 2  Tbsp. soy sauce 2  Tbsp. Dijon mustard 1  Tbsp. extra-virgin olive oil 1-2 cloves minced garlic fresh (or dried) thyme to taste freshly ground cracked pepper Rinse and pat dry salmon. Combine butter, honey, and brown sugar and melt together in small pan.  Add soy sauce, Dijon mustard, olive oil, garlic, thyme and pepper. Pour over fish and marinate 30 minutes or longer. Grill over hot coals for 8-10 minutes - depending on thickness and preferred salmon doneness. Leftover marinade can be heated well and served over fish. O, wind, If Winter comes, can Spring be far behind? ~ Percy Bysshe Shelley 'OLD MAN WINTER' ______________ PORK TENDERLOIN with CRANBERRY PORT SAUCE ~ Super easy holiday fare 3 pounds pork tenderloin ( l large or 2 smaller) 2 Tbsp. Dijon mustard 1/2 tsp. dried thyme 1/2 tsp. dried oregano garlic powder cracked pepper 1 cup ruby Port 1 cup whole cranberry sauce Spread mustard over tenderloins. Sprinkle with herbs, garlic powder and cracked pepper. Bake at 325º for 35 to 45 minutes depending on size, basting frequently. Remove meat from pan to rest. Add port to pan and deglaze , scraping bits from bottom. Add cranberry sauce and adjust seasonings. Slice pork diagonally and serve with sauce. (easy broiling as tasty as frying) _________ 1 lb. good lump crab meat 1 cup panko crumbs 2 large lightly beaten organic eggs 1/4 cup chopped fresh cilantro 4 finely chopped green onions 1/2 diced red bell pepper 1/2 diced yellow pepper 1 Tbs. chopped green chilies 2/3 cup mayonnaise coarse salt & freshly ground pepper to taste 2 Tbsp. melted unsalted butter Hungarian paprika chopped green onions or chives Combine all ingredients. GINGERBREAD SOUFFLE with WARM CARAMEL SAUCE ~ Holiday favorite if only for the sweet smells of cloves, cinnamon, and ginger drifting throughout the house (adapted from That's My Home ) _______ 6 Tbsp. unsalted butter 6 Tbsp. all-purpose flour 1 cup milk 1/2 cup heavy or whipping cream 5 egg yolks 1 1/2 cups packed light brown sugar 1 Tbsp. ground ginger 1 tsp. cinnamon 1/2 tsp. ground nutmeg 1/4 tsp. ground cloves 2 Tbsp. chopped crystallized ginger 7 (room temp.) egg whites Whipped cream (garnish) sugar for coating souffle dish Preheat oven to 425-degrees. WINTER GREENS with CRANBERRY PORT VINAIGRETTE ~ Delicious 'wilted' salad clipped from Bon Appetit (Dec 1992) _____________ 1 cup tawny port 1/3 cup sliced shallots 1 cup fresh cranberries 1/3 cup vegetable or canola oil 3 Tbsp. raspberry vinegar or red wine vinegar coarse salt & freshly ground pepper 8 cups assorted greens 2/3 cup crumbled Stilton or blue cheese 1/4 cup chopped pistachios Combine Port and shallots in heavy small saucepan.
