Steelhead (salmon or trout) fillets 3 Tbsp. extra-virgin olive oil 1/3 cup brown sugar 1/4 cup vodka or vermouth 1/4 cup fresh lemon juice and zest 2 Tbsp. Dijon mustard 1 Tbsp. chopped fresh thyme freshly ground black pepper Combine olive oil, brown sugar, vodka, lemon juice, zest, thyme & black pepper. Pour over fillets and marinate several hours.
