    A simple vegetable dish that is quite good.I had no carrots so i added cauliflower and Brussel sprouts. This is so close to the way i make root vegetables, except i like to add onion and some garlic.
    Made for the October Squash challenge.

    I found this site and your recipe today, when searching online for a turkey quinoa meatloaf recipe. I've never used adobo peppers before, and liked the kick! This was great - flavorful and moist, but not greasy. Thanks so much! ~Kathi
