    You could use a GF "all purpose" flour for the 5 cups of wheat flour, I'd suggest adding 1/2 tsp guar or xanthan gum too. You can also make your own blend, I have a few listed on this site.

    Thank you for modifying your pumpkin butter recipe.
    I think the original recipe will be just fine if used as a fresh use, refrigerator, or freezer product. Please repost it as such. It's just the canning process that causes concern. The vacuum created during the canning process and the variable viscosity of the pumpkin is what creates an environment for microorganisms to flourish.
    I would like to make a batch for fresh use out of the refrigerator.
    I'm always on the lookout for recipes I can "can". That's what drew me to your recipe in the first place.
