How to make it

  • Sauté the onions, celery, carrots, garlic , in oil for 5 min or until onions are translucent- add the tomatoes, parsley, and basil , and salt and pepper to taste – bring to a simmer and cover –simmer for 30 mins –then take about a cup full of just the tomato chunks out of the sauce and set aside and let it and the rest of the sauce cool- when the sauce is cool put the sauce through a food mill using the smallest holes - when finished put tomatoes back in pan add the oregano curry and the reserved tomatoe chunks lower to a simmer and cook for 15 more mins- add pepper
  • ( the reason I reserve the cup of chunk tomatoes –is so it has some body to it –and it looks more Italian – lol ) This is a basic sauce that can be used with meat ,fish or just the way it is .

    Don't be frighen lol- you will never know its in there - but it sure does improve the flavor now don't go overboard with it , just 2 or 3 quick dashes - good luck- John

  • Small onion- minced
  • 2 stalks of celery chopped small
  • 2 lg carrots chopped small
  • 4 garlic cloves smashed
  • 20 sprigs of parsley chopped
  • 10 lg basil leaves chopped
  • 1 ,2 or 3 cans of 35 oz Italian tomatoes (depends on how many people you are feeding) crushed them with your fingers
  • 3 tlsp of olive oil
  • Salt and pepper to taste
  • Heaping tsp of dried oregano
  • 3 dashes of curry powder
