How to make it

  • Preheat oven to 375 degrees
  • Use tin foil to line baking pan, or teflon baking tray,
  • In a deep bowl, make a little pool of the oil, throw in your spices, and throw in the uncooked fries. With a wooden spoon, stir it all around until all the fries are coated. Lay them out on the baking tray in a single layer. Bake for 20 minutes. Turn the fries over and sprinkle parmesan on if desired. Continue baking for about 20 more minutes, until desired crispness attained.
  • Serve hot and immediately

  • 3 large potatoes (russet) or 5-6 smaller potatoes (yukon gold or small russets) washed and cut in long fingers like "frenchfries". I usually leave the skins intact.
  • 2 1/2 Tablespoons oil ( evoo)
  • herbs and spices of choice: Red Star yeast, garlic powder, chile powder, oregano, rosemary, sage, thyme, chile peppers , popcorn blend, pesto blend, all purpose blend paprika, etc etc
  • Parmesan cheese (optional)
