TOMATOEY CHICKEN STIRFRY

- 1 cup ketchup shopping list
- 1 cup tomato juice shopping list
- 2 tbsp soy sauce shopping list
- 2 tsp worcestershire sauce shopping list
- 1 tsp horseradish shopping list
- 1 tsp ginger; freshly grated shopping list
- 1 onion; sliced shopping list
- 1 lb chicken breasts; cut into thin strips shopping list
- 4 cups mixed vegetables (broccoli, asparagus, bok choy, peas, peppers, mushrooms...whatever you choose) shopping list
- lime wedges; optional shopping list
How to make it
- Mix ketchup with tomato juice, worcestershire, horseradish and ginger.
- Reserve.
- Heat oil in a deep skillet set over medium-high heat.
- Add onion ad stir-fry for 3 minutes.
- Add chicken and continue to stir-fry for 3 minutes.
- Add vegetables and stir fry for 2 minutes longer.
- Make a well in the middle of the pan and pour in reserved tomato juice mixture.
- Bring to a boil.
- Reduce heat and simmer for 3-5 minutes or until meat is cooked through and the sauce is thickened. Garnish with lime wedge.
