Chicken Breasts Temecula

- 6 boneless,skinless chicken breast halves shopping list
- flour shopping list
- 1 c bread crumbs shopping list
- 2 eggs,well beaten shopping list
- 3 Tbs butter shopping list
- 3 Tbs oil shopping list
- 3 tomatoes,sliced shopping list
- 2 avocados,peeled and sliced shopping list
- mornay sauce shopping list
- parmesan cheese,fresh grated shopping list
- Mornay sauce: shopping list
- 4 Tbs butter shopping list
- 4 Tbs flour shopping list
- 2 c milk,scalded shopping list
- salt and white pepper shopping list
- 2 egg yolks shopping list
- 1/4 c cream shopping list
- 1/2 c fesh parmesan cheese or blend of 1/4 c parmesan and 1/4 c swiss cheese shopping list
How to make it
- Pound chicken lightly between 2 pieces of plastic wrap,then bread by dipping in flour,then egg,then in bread crumbs. Saute in butter and oil till brown on both sides. place on cookie sheet. Top with the tomato slices and mornay sauce and then sprinkle with fresh grated parmesan cheese. Brown lightly under the broiler. Top with avocado slices ,if desired.
- Mornay sauce: Melt butter in small saucepan;add flour. Mix well and add hot milk. Stir till thickened. Add salt and pepper to taste. Beat together egg yolks with cream. Add to white sauce mixture a little at a time and cook till well heated. Add cheeses a little at a time,stirring till smooth. Add salt and pepper to taste.
