Stuffed Pork Tenderloin

- 1 pork tenderloin shopping list
- 1 package of frozen spinach, thawed, and squeezed shopping list
- 1 package cream cheese shopping list
- 3 oz of sun dried tomatoes packed in oil. Drained and chopped shopping list
- 3 oz of pine nuts, (Best if toasted lightly) shopping list
- salt & pepper to taste shopping list
- 1 Tbsp butter shopping list
- 1 Tbsp grape seed oil, or extra virgin olive oil shopping list
How to make it
- Cut the tenderloin lengthwise, BUT make sure you do not cut all the way through (Butterfly cut)
- Place tenderloin in some wax paper and flatten
- Then you want to combine the cream cheese, the drained spinach, sun-dried tomatoes, and the lightly toasted pine nuts
- Season the inside of the pork tenderloin with salt and pepper
- Now you can fill the tenderloin with the cream cheese mixture
- Roll up the tenderloin, and you would be best to secure the tenderloin with some kitchen/roasting string
- Okay...preheat the oven to 400F
- While your waiting for the oven to warm, melt the butter and oil in a skillet, (an oven safe skillet if you have) and sear all sides over medium-high heat until lightly browned
- After this is done, transfer the tenderloin into the oven for about 15 to 20 minutes, depending on your desired doneness. (If you do not have a oven safe skillet simply transfer into a roasting pan/pot)After desired doneness is achieved, remove from oven and let stand for 10 minutes before you slice the tenderloin
- Then..serve
