Easy Chicken Piccata

- ⅓ to ½ cup flour shopping list
- ½ teaspoon freshly ground sea salt shopping list
- ¼ teaspoon freshly ground black pepper shopping list
- 2 skinless, boneless chicken breasts, cut in half horizontally to give you 2 thin filets from each breast (if there is a section of the rib meat attached to the breast, cut it off and fry it with the other pieces) shopping list
- 4 tablespoons butter, divided shopping list
- 3 tablespoons extra virgin olive oil shopping list
- ⅓ cup fresh squeezed lemon juice shopping list
- ⅔ cup chicken stock shopping list
- ¼ cup capers shopping list
- ¼ teaspoon garlic salt, or to taste shopping list
How to make it
- Season flour with salt and pepper, then dredge chicken pieces in the seasoned flour.
- In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil.
- When butter and oil start to sizzle, add flour-coated chicken pieces and cook for about 3 minutes.
- When chicken is lightly browned, flip and cook other side for 3 minutes.
- Remove chicken to a cookie sheet and keep it warm in 200 degree oven while reducing the sauce.
- Add lemon juice, stock and capers to the skillet.
- Bring sauce to a boil, scraping up the brown bits from the bottom of the pan.
- Add garlic salt and check for seasoning – add additional salt and pepper, if needed.
- Gently boil the sauce for a couple minuites to reduce it down a bit.
- Return chicken pieces to the pan and gently simmer for 3 minutes.
- Place chicken pieces on two plates.
- Add remaining 2 tablespoons butter to sauce and whisk quickly.
- Pour sauce over chicken and serve immediately.
- If serving with pasta, top it with a bit of the sauce, too.
