How to make it
- Pre-heat grill to medium-high
- AU JUS
- to make your own if you grill the pork tenderloins and don't have much juice:
- Saute onion, celery and carrot in olive oil a saucepan over medium high heat
- Cook until slightly softened, about 3-4 minutes
- Stir intomatoe paste, saute 1 minute
- Stir in broth and bay leaf and bring to a boil
- Reduce heat to medium and simmer until reduced by half, about 15 minutes
- Strain jus, season with salt and pepper, keep warm
- PORK TENDERLOIN
- Combine seasonings for the pork, then rub onto the meat
- Wrap with foil, shiny side to meat
- Grill about 10 minutes, turn, and gril another 10 minutes, until reaches internal temp of 150
- Remove from grill and let rest 8 minutes
- OR....roast in the oven on 350 for about 25 min (until internal temp of 150, rest 8-10 min) and use the pan juices instead of the stock to make your Au Jus (and don't need to saute the veggies, either).
- Lightly toast split hoagie rolls on grill
- Transfer half of the au jus to a shallow dish
- Slice pork tenderloin thin
- Dip pork slices into jus and stack on hoagie rolls
- Lay a slice of provolone on top of the pork
- Serve sandwiches with remaining au jus on the side for dipping
