Turnip Greens my way

- Approximately 3 bunches of turnip greens from the market, or 2 gal. if from your own garden shopping list
- 4 boneless pork chops shopping list
- 1/4 cabbage head, chopped or shredded shopping list
- 2 tbs. vegetable oil shopping list
How to make it
- Wash the turnip greens well, using your own preferred method. I wash mine under running water then soak them in salt water for about an hour. The salt water soak is to kill any little critters that might be on the leaves.
- Place greens into dutch oven and cover with water. Add your chopped cabbage, the pork chops, and the vegetable oil. The cabbage mellows out the taste of the greens perfectly.
- Bring to a boil (watch carefully at this stage as they have a tendency to 'boil over' from the full pot), then cover and cook on low heat for approximately 4-5 hours or until the chops are VERY tender. Salt and pepper to taste.
- Serve with homemade pepper sauce, or vinegar dressing. The vinegar or pepper sauce is an important step, as it adds a special flavor just right for turnip greens.
