Vension Roast Ala Crockpot

- 1 venison roast shopping list
- 7 carrots, cut in half and then sliced into 2 inch sections shopping list
- 4 pieces of celery, cut in half and then sliced into 2 inch sections shopping list
- 1 onion, sliced shopping list
- 1/2 cup Shitake mushrooms, dehydrated and soaked overnight - use the water as well shopping list
- 1/2 cup corn (if you have a Trader Joe's, I highly recommend the smoked corn) shopping list
- 1 cup red wine shopping list
- 1 package beef Stew seasonings shopping list
- 2 cups water shopping list
- 2 sprigs fresh thyme shopping list
- 2 bay leaves shopping list
- 2 Tbsp Minced garlic shopping list
How to make it
- Soak the dehydrated mushrooms overnight in a plastic container or small bowl with enough water to cover them.
- Mix the Beef Stew Seasoning with 2 cups of water
- Coat (pour over) the Venison Roast with the Seasoning mix while in the crockpot
- Pour in the wine
- Put in the Minced Garlic, dehydrated mushrooms, and the mushroom water
- Put vegetables in (you can edit or add to the vegetables depending on your guests)
- Add the rest of the seasonings, tucking in the bay leaves.
- Cook on low for 10 hours or on high for 5 hours,or until roast is done.
- When the roast is done, take out the roast and slice it. Save bones and freeze for future stock use.
- Take out the vegetables (I used a small strainer) and put in a serving bowl.
- Take 1 cup of the broth out of the crockpot, place through strainer, and place in a small sauce pan to make gravy with. Make gravy.
- Place sliced venison back in the crockpot with the broth you didn't use to make gravy with (This will prevent drying out and gives those who may not care for gravy a great alternative)
- Serve venison in the broth with mashed potatoes, hot bread or cornbread, the vegetables from the crockpot and gravy.

Sounds delicious! Venison is hard to get, unless you run over it with your car, LOL. I bet this would be just as good with beef!

Those mushrooms and stock add a nice earthy flavor to a dish like this. I am jealous you have venison I would love a supply to try this recipe out.
