Tamale Meatballs

- 1 1/2lb ground beef shopping list
- 1/2lb ground pork shopping list
- 2 1/2 cups corn bread crumbs shopping list
- 1 egg shopping list
- 8oz Spicy tomato juice cocktail, divided shopping list
- 14oz tomato sauce, divided shopping list
- 1T canned jalapenos, drained and diced shopping list
- 1 small onion, grated shopping list
- salt and pepper shopping list
- couple T fresh parsley, chopped shopping list
- 1/2 cup queso fresco, shredded shopping list
How to make it
- Combine all ingredients other than half each of the Tomato juice and sauce.
- Form into small meatballs and arrange on wire rack, over cookie sheet.
- Bake at 350 for about 20 minutes.
- Serve either fondue style by heating the remaining juice and sauce and a bit of salt and pepper and dipping meatballs into it.
- Or, you can put them in a slow cooker, cover with the remaining tomato mixture and keep on warm
- Or, put back into a 9X13 and top with the sauce and bake another few minutes to warm through.
