Pecan Bar
From linspj 16 years agoIngredients
- 2 cups all-purpose flour shopping list
- 1/3 cup white sugar shopping list
- 1/4 teaspoon salt shopping list
- 2/3 cup butter shopping list
- 3 eggs shopping list
- 1 cup light corn syrup shopping list
- 3/4 cup brown sugar shopping list
- 1/4 cup white sugar shopping list
- 2 tablespoons butter, melted shopping list
- 1 teaspoon vanilla extract shopping list
- 2 cups whole pecans, toasted & tossed with 1 tbsp butter shopping list
How to make it
- Preheat oven to 350 degrees F (175 degrees C).
- Line a 9x13 pan with foil, grease.
- In a large bowl, stir together the flour, 1/3 cup sugar, and salt.
- Cut in 2/3 cup of butter until mixture resembles coarse crumbs. Sprinkle the mixture evenly over the prepared pan, and press in firmly.
- Bake for 20 minutes in the preheated oven.
- While the crust is baking, prepare the filling. In a large bowl mix together the eggs, corn syrup, 1 cup total brown & white sugars, 2 tablespoons melted butter, and vanilla until smooth.
- Stir in the pecans. Spread the filling evenly over the crust as soon as it comes out of the oven.
- Bake for 25 minutes in the preheated oven, or until set.
- Allow to cool completely on a wire rack before slicing into bars.
- *Note- After these cooled on a rack for about 3 hours, I put them in the freezer for 30 minutes. This made the cutting process super easy.
