- 2 tbls.olive oil shopping list
- 1 onion, chopped shopping list
- 2 tomatoes, peeled and chopped shopping list
- 4 oz. can chiles Or jalapenos, chopped shopping list
- 1 10 oz. pkg frozen chopped spinach, thawed, then squeezed dry shopping list
- 2 cups Monterey Jack, grated shopping list
- 1 cup sour cream shopping list
- 1 can sliced black olives, drained shopping list
- 1 tbls. red wine vinegar shopping list
- 1 tbls. garlic powder shopping list
- 8 oz. cream cheese, softened shopping list
How to make it
- Preheat oven to 400
- Heat oil in skillet
- Add onion and saute until tender
- Add tomatoes and chilies
- Cook for 2 minutes
- Put in mixing bowl and add spinach
- Mix well
- Stir in remaining ingredients and mix well
- Spray shallow baking dish with cooking spray
- Bake at 400 until bubbly and light brown, about 30 minutes
- Serve with tortilla chips
