Chewy Coconut Cookies

- 2 cups all-purpose flour shopping list
- 2/3 cup sugar shopping list
- 3/4 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1/3 cup dark corn syrup shopping list
- 3 tablespoons vegetable oil shopping list
- 1 teaspoon vanilla extract shopping list
- 1 teaspoon coconut extract shopping list
- 2 egg whites shopping list
- 1/3 cup coconut - flaked shopping list
- vegetable cooking spray shopping list
- 2 tablespoons coconut - flaked and toasted shopping list
How to make it
- Combine first 4 ingredients in a large bowl; stir well. In a small bowl combine corn syrup, oil, extracts, and egg whites; stir well. Add corn syrup mixture to dry ingredients, stirring just until dry ingredients are moistened. Stir in 1/3 cup coconut.
- Drop dough by level tablespoons onto baking sheets coated with cooking spray. Sprinkle toasted coconut over cookies.
- Bake at 350° F. for 8 minutes; let cool on pans 1 minute. Remove from pans; let cool completely on wire racks.
