Greek Fries

- 3 medium russet potatoes, sliced into fries shopping list
- 4oz feta cheese, crumbledd shopping list
- 1/4 cup kalamata olives, sliced shopping list
- 2-3T balsamic vinegar shopping list
- 1t lemon grass, chopped* shopping list
- 1/2t dried oregano shopping list
- 1t parsley flakes shopping list
- 1t paprika shopping list
- 1/2t sea or kosher salt shopping list
- 1 clove garlic, crushed or minced shopping list
- 1/4 cup dressing quality olive oil shopping list
- peanut oil for frying, if desired shopping list
- *if lemongrass is unavailable, you can use green onion tops and a touch of lemon juice to replace part of the vinegar shopping list
How to make it
- Fry potatoes in 375degree oil for 5-7 minutes, until golden brown.(or, bake in 450 oven for about 35-40 minutes, until cooked though)
- Meanwhile, in large bowl, combine vinegar and spices and slowly whisk in oil to combine.
- Drain fried potatoes on brown paper or paper towels then add to bowl
- Toss to combine.
- Arrange on serving plates or on platter, and top with feta cheese and sliced olives.
- ~you can place fries in 250 oven for a few minutes to rewarm, if needed, before adding the cheese and olives---these don't need to be served steaming hot, but you will prolly need a fork! :)
