Green Pea Coconut Soup
Ingredients
- 1 package of split green peas
- 1 can of coconut milk (low fat coconut milk can also be used)
- 1 onion - chopped
- 1 half clove of garlic - chopped
- 3 tablespoons of olive oil
- 1 carrot - chopped
- 2 stalks of celery - chopped
- 1/2 teaspoon of curry powder
- 1/2 teaspoon of tumeric
- Salt & pepper to taste
How to make it
- Saute onions, garlic, carrots, and celery in a large pot
- rinse off green peas and add to pot
- cover with water
- When ingredients start to boil, add curry powder, tumeric,
- salt and peper
- continue boiling on low until peas are very soft
- when done let cool and pour in blender, pulse until smooth.
