Vegetarian Chilli
Ingredients
- 1 brown onion, chopped
- 1 small red chilli, de-seeded and chopped finely
- 1 small red capsicum (bell pepper) chopped
- 1 tsp chilli powder
- 2 tsp cumin
- 1 tsp thyme
- 1 stick cinnamon
- 2 garlic cloves, crushed
- 1 can four-bean mix, drained and rinsed
- 1 can lentils, drained and rinsed
- 1 corn cob, corns removed
- 1 small tub tomato paste (about 1/4 cup)
- 1/2 cup water (as needed)
- chopped parsley, to serve
- natural yoghurt, to serve
How to make it
- Spray a large pot with cooking spray. Cook onion, chilli and capsicum till soft, then add chilli powder, cummin, thyme and garlic.
- Reduce heat to low, add everything else, except water.
- Cover and simmer 15 minutes, stirring occasionally. Remove lid and cook a further 5 minutes or whatever, till thick, adding water as needed.
- Serve with a dollop..(ew i just realised how much i dont like that word) ...of natural yoghurt and a sprinkle of chopped parsley.
- Oh have it with cornbread too. ( i have a recipe......incase you don't..)
