Beef Stew and Dumplings

- Stew shopping list
- Half a kilo of stewing beef or any cut you prefer chopped into 1 inch cubes shopping list
- 2 or 3 onions Chopped roughly shopping list
- 3 carrots sliced (not to thin) shopping list
- 1 medium sized swede (chopped) shopping list
- 1 fennel bulb (chopped) shopping list
- 1 Small pumpkin (skinned and chopped) shopping list
- 4 Sticks of celery (de stringed and sliced) shopping list
- 4 Meduim to large old potoatos (chopped) or 10 new potatos cut in half. shopping list
- 4 Minature marrows (sliced) shopping list
- 250 grams button mushrooms left whole shopping list
- Half a cup of red lentils shopping list
- Half a cup of pearl barley shopping list
- Good pinch of salt and pepper shopping list
- 2 tablespoons of dried herbs shopping list
- 1 vegetable stock cube shopping list
- 1 beef stock cube shopping list
- gravy thickening granuals shopping list
- Enough water to just cover the stew ingredients for cooking shopping list
- Dumplings shopping list
- 6oz of self raising flour shopping list
- 3oz of vegetarian suet or beef suet shopping list
- Good pinch of salt and pepper. You can add herbs if you wish but use sparingly. shopping list
How to make it
- Stew
- Place all the Vegetables, stock cubes, seasoning and beef into a pressure cooker
- Place on the lid and bring to full pressure (as per manufactures instructions) and allow to cook for 5 minutes.
- Dumplings
- Blend the flour suet and seasoning in a bowl.
- Gently add enough water to make to a firm dough.
- Devide into meduim sized balls and leave to rest whilst the stew is cooking.
- Stew
- When 5 minutes cooking time is reached depressurise the cooker as per the manufactures instructions.
- Return the cooker back to a reduced heat and add the dumpling balls, gently pushing them under the gravy in the pot.
- Place the lid loosely back on the pressure cooker and leave to simmer for 20 mins.
- When the dumplings are cooked remove themplace in a bowl and keep warm.
- Add thickening gravy granules to the stew and stir until the mixture is thickened and the granuales have dissolved completely.
- Put the dumplings on a plate and serve the stew with them .
- Eat with big chunks of fresh bread.
- Great meal for Autumn and Winter to ward off the chills.
- You can omitt the beef and beef stock cube but add another vegtable stock cube and a squeeze of tomato puree to make this a vegetarian dish.
