Noodle Stir-fry In Hoisin-soy Sauce

- salt and pepper to taste shopping list
- 3/4c chicken broth shopping list
- 1/2c soy sauce shopping list
- 2Tbs hoisin sauce shopping list
- 1Tbs cornstarch shopping list
- 1lb. linguine shopping list
- 2Tbs veg oil shopping list
- 1 small head bok choy,sliced 1/2" thick,stems and leaves seperated shopping list
- 8 oz. white mushrooms,thin sliced shopping list
- 2 med. red,orange or yellow peppers,cored,seeded and thinly sliced shopping list
- 1 bunch scallions,thinly sliced shopping list
How to make it
- Bring lg. pot of salted water to a boil over high heat.
- In small bowl,combine stock,soy sauce,hoisin and soy sauce.
- Add linguine to boiling water and cook,stirring often for 8-10 mins till tender but still has some bite.
- Meanwhile,in a large flameproof casserole that will hold the linguine and all the vegetables,heat the oil over med-high heat. Add bok choy stems and cook 2mins,stirring constantly or till stems begin to soften.
- Add the mushrooms and cook 2 mins,stirring constantly or til edges begin to brown.
- Ad the peppers,cook 2 mins,stirring constantly or til they begin to soften
- Add bok-choy leaves,cook 2 mins,stirring often or til vegetables are tender.
- Stir the chicken stock mixture again. Add it to the vegetables and cook 1-2 mins.stirring,or till sauce thickens.
- Drain linguine,add to the vegetables and toss to combine.
- Add the scallions,salt and pepper.
