Tamale Bites

- 1 1/2 pounds ground beef shopping list
- 1 cup finely chopped onions shopping list
- 1/2 cups finely chopped green bell pepper shopping list
- 1 to 1 1/2 tablespoons olive oil shopping list
- 1 egg shopping list
- 1/2 cup sliced green onions shopping list
- 1 can(10 oz.) mild enchilada sauce shopping list
- 1 can(8 oz.) tomato sauce shopping list
- 2 cups crumbled cornbread ( I use 1 box Jiffy brand corn bread and make it according to the package directions)*you can also make and use a Mexican cornbread if preferred! shopping list
- 1/2 cup sliced black olives (more or less depending on taste)* these are optional shopping list
- salt shopping list
- 1 teaspoon cracked black pepper shopping list
- 8 oz. Mexican Blend Shredded cheese or you can use cheddar or pepper jack cheese shopping list
How to make it
- Preheat oven to 350 degrees.
- Saute onion and bell pepper in olive oil until tender.
- In a large mixing bowl, combine cornbread with 1/2 of the enchilada sauce.
- Add onion mixture,egg and ground beef
- Season with salt and pepper and shape or roll into 1 inch balls.
- Place on baking pan lined with foil or spray a baking pan with non stick spray.
- Bake for 15 to 18 minutes
- Remove from oven and let cool slightly.
- Place meatballs in chaffing dish or crock pot(on low)
- Mix together remaining enchilada sauce and tomato sauce.
- Pour sauce over meatballs.
- Sprinkle with cheese, black olives, and green onions.
- Serve warm with pretzel rods as tooth picks

Damnit, I'm trying to lose some weight here and you people are not helping the matter posting these recipes. Cornbread mixed with ground bef for meatballs has to be awesome.
