Aunt Susies Pistachio Ambrosia

My Aunt Susie makes this and it is perfect for those hot summer days when the last thing you wanna do is turn the oven on. The first time I tasted it I was hooked! It's cool, fruity and creamy.
Ingredients
- 1 20 oz can pineapple tidbits and all juice (light syrup) shopping list
- 1 15 oz can fruit cocktail and all juice (light syrup) shopping list
- 1 11 oz can mandrin oranges drained shopping list
- 2 small boxes of pistachio pudding shopping list
- 1 cup of sour cream shopping list
- 8 oz of Cool Whip (thawed) shopping list
- ** If doubling recipe double everything except 12 oz Cool Whip shopping list
- ** Handfull fine chopped pecans for garnish if desired shopping list
How to make it
- Drain fruit and reserve 1 1/2 cups of juice
- place unprepared pudding mix in large bowl and add the 1 1/2 cups of reserved juice and mix well
- add sour cream and cool whip, mix well
- Fold in fruit and let chill
- Add pecans for garnish if desired

This sound great for a summer treat. Love the fruit with the pistachio pudding, I have some whole pistachios to use as a garnish on top.
