Spanish Scramble
From rosemaryblue 16 years ago- 20 minutes to make
- Serves 6
Onions, green pepper and Rotel are simmered in butter. Beaten eggs are added and cooked until set. Bring out the tortillas and a little cheese. Great for breakfast or supper.
Ingredients
- 1/2 medium onion, chopped shopping list
- 1/2 medium green pepper, chopped shopping list
- 1 tablespoon butter shopping list
- 1 can rotel tomatoes and green chilies shopping list
- 6-8 eggs, beaten shopping list
- Optional: a little cumin, garlic, chili powder shopping list
How to make it
- Simmer onion, green pepper and Rotel ingredients in butter until tender and sauce is thick
- Add beaten eggs and cook until set
- Great for breakfast or supper
- Serve with tortillas and cheese
