Pumpkin Chocolate Chip Muffins

- 1 2/3 c. flour shopping list
- 1 c. sugar shopping list
- 1 T. pumpkin pie spice shopping list
- 1 t. baking soda shopping list
- ¼ t. baking powder shopping list
- ¼ t. salt shopping list
- 2 eggs shopping list
- 1 c. pumpkin shopping list
- ½ c. margarine, melted shopping list
- 1 c. chocolate chips shopping list
- ½ c. chopped walnuts, if desired shopping list
How to make it
- Preheat oven to 350 degrees. Grease muffin tins (2). Mix dry ingredients together. In another bowl, mix together eggs, pumpkin, and margarine. Beat until well blended. Stir in chocolate chips and nuts. Mix in dry ingredients. Spoon into greased muffin tins. Bake about 20-25 minutes. Place muffins on cooling racks after removing from oven. Put muffins in a ziplock bag and put in refrigerator. Let muffins sit one-three days before eating to allow flavors to set in well. Reheat before serving if desired. Makes one dozen muffins.
