How to make it

  • Prehead oven to 400 degrees.
  • Combine first 3 ingredients in a shallow dish.
  • Place panko in a shallow dish.
  • Dip chicken, one piece at a time, into buttermilk mixture; dredge in panko.
  • Place chicken on a baking sheet lined with parchment paper.
  • Lightly coat chicken with cooking spray.
  • Bake at 400 degrees for 40 minutes or until done; turning after 20 minutes.
  • Yield: 4 servings

    Really nice flavor! I had four thighs and they were pretty big. I did the 40 minutes, then flipped again for another 10. Some of the Panko came off when I flipped for the second time and I just kinda patched it back on. I liked the parchment paper clean-up. Thanks, Zena!
