Fresh Tomato with Linguini

- 10 ripe roma tomatoes (or more if you like tons of tomatoes), chopped into small cubes (Leave skin on) shopping list
- 1 6 ounce can pitted black olives, sliced shopping list
- 1/2 cup fresh basil, chopped shopping list
- 1/4 to 1/2 cup romano cheese, grated shopping list
- kosher salt to taste shopping list
- garlic powder to taste shopping list
- fresh ground pepper to taste shopping list
- 1/3 to 1/2 cup extra virgin olive oil shopping list
- 1 pound linguine (I like wheat but anything is good!) shopping list
How to make it
- Preheat oven to 350 degrees
- In a baking dish, combine tomatoes, olives, basil, Romano cheese, salt, garlic powder and pepper
- Drizzle olive oil over the top
- Bake for 30 minutes
- Boil linguine according to package instructions while tomato mixture is baking
- Drain linguine and place into serving dish
- Pour baked tomato mixture over linguine, mix and serve
