Tahini Tempeh Pita Pockets

- Sauce: shopping list
- 1 cup soy yogurt or rice yogurt plain or vanilla shopping list
- 2 tbs. joyva sesame tahini shopping list
- 1 clove garlic minced shopping list
- 1 tsp. lemon juice shopping list
- pinch of salt shopping list
- Pita Pockets: shopping list
- 4 large whole wheat pita breads shopping list
- 8oz. tempeh cubed shopping list
- 2 ripe tomatos shopping list
- 1 cup fresh baby spinach leaves torn shopping list
- 1 cup sprouts shopping list
- 1 avocado diced shopping list
- 1/4 cup seasame seeds or almond slices shopping list
How to make it
- In a bowl mix sauce ingredients until blended
- Slice edge of pita pocket and open pockets
- This is where you can choose to cook your tempeh
- You can lightly brown in a skillet
- I like mine in its raw form for this meal
- After you cooked it or not
- combine in another bowl with tomatoes and spinach. Add 1/4 cup of sauce and toss
- Add sprouts and avocado toss again
- spoon mixture into all the pockets
- Add left over sauce to all the pockets

Tempeh recipes are a great way to leave the meat world behind. I love the garlic, lemon, yogurt and tahini in the sauce.
