Irish Potatoes

- 2 blocks of cream cheese (regular or low fat or fat free) shopping list
- 1 1/2 cups confectioner's sugar shopping list
- 1 1/2 cups shredded coconut shopping list
- ground cinnamon shopping list
How to make it
- Empty the cream cheese onto a large cutting board or even onto a countertop.
- Dump the coconut and confectioner's sugar on top of cream cheese.
- With your hands, thoroughly mix the whole mess together.
- Roll about a tablespoon of the mixture between your hand to form a ball.
- Dump approximately 4-5 tablespoons of ground cinnamon into a glass dish.
- Roll the cream cheese balls in the cinnamon to thoroughly cover all areas.
- Place in an airtight container with either wax or parchment paaper between the layers of the "potatoes" and chill until you are ready to serve, or at least one hour. Enjoy!!
