Ingredients

How to make it

  • Empty the cream cheese onto a large cutting board or even onto a countertop.
  • Dump the coconut and confectioner's sugar on top of cream cheese.
  • With your hands, thoroughly mix the whole mess together.
  • Roll about a tablespoon of the mixture between your hand to form a ball.
  • Dump approximately 4-5 tablespoons of ground cinnamon into a glass dish.
  • Roll the cream cheese balls in the cinnamon to thoroughly cover all areas.
  • Place in an airtight container with either wax or parchment paaper between the layers of the "potatoes" and chill until you are ready to serve, or at least one hour. Enjoy!!

    Do you serve these with crackers or do you eat them alone?

    You said:I just eat them by themselves, since I make them bite size. You could make them a bit larger and then serve them with graham cracker sticks, vanilla wafers, or whatever strikes you. They are pretty sweet, but with a tart end due to the cream cheese. Someone asked if you can sub anything out for the coconut, which I've never done, but I'm sure really tiny chocolate chips would be great, too!
