Ingredients

How to make it

  • Remove zest from lemons
  • Juice lemons to equal 1/2c. and set aside
  • Put zest in a food processor and add sugar, process 2 min.
  • Cream butter, sugar, and lemon zest in a mixing bowl
  • Add eggs one at a time
  • Add lemon juice and salt
  • Mix till combined
  • Pour mixture in a sauce pan
  • Cook over low heat stirring constantly until thickened

    Really nice - I used home grown Myers lemons and french maran eggs. I doubled the recipe - just excellent!

    I have never had lemon curd. I need it for a recipe. I have clicked on so many and they all are great sounding. each 1 a little different. I'm having a hard time choosing!!! lol. for 1 I didn't think it would be so easy. thanks for the post!

    I have never made lemon curd. I usually purchase it and I will bet this is really better. I do love the kind I buy. I eat it right out of the jar. I should try this.

    I haven't made lemon curd for ages....... I used to make lemon curd in the microwave, better on the stove top. cheers
