Contessas Lemon Curd

- 4 lemons at room temp. (roll on counter to soften) shopping list
- 11/2c. sugar shopping list
- 1/4 lb. unsalted butter shopping list
- 4 extra large eggs shopping list
- 1/8t. salt shopping list
How to make it
- Remove zest from lemons
- Juice lemons to equal 1/2c. and set aside
- Put zest in a food processor and add sugar, process 2 min.
- Cream butter, sugar, and lemon zest in a mixing bowl
- Add eggs one at a time
- Add lemon juice and salt
- Mix till combined
- Pour mixture in a sauce pan
- Cook over low heat stirring constantly until thickened
