Greek stuffed pork roast

- 1/4 cup chopped fresh mushrooms shopping list
- 1/4 cup chopped onion shopping list
- 1 tablespoon vegetable oil shopping list
- 1 (10 ounce) package frozen chopped spinach, thawed and well drained shopping list
- 1 cup soft bread crumbs shopping list
- 1 cup feta cheese shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 1 teaspoon minced garlic shopping list
- 1 tbs oregano shopping list
- 4 pounds boneless loin pork roast, tied shopping list
How to make it
- In a skillet, saute mushrooms and onion in oil until tender. Stir in spinach, bread crumbs,cheese, salt, pepper, minced garlic, and oregano. untie pork roast and separate the loins. Spread stuffing over one loin to within 1 in. of the edges. Top with the remaining loin; retie securely with heavy string. Place in an ungreased shallow baking pan. Bake, uncovered, at 325 degrees F for 2-1/2 hours or until a meat thermometer reads 160 degrees F-170 degrees F. Let stand for 15 minutes before slicing.
