How to make it

  • mix all dry ingredients
  • in a saute pan(big enough to hold all the fish)melt butter and saute garlic(if your pan can't hold all the fish,fry in 2 batches and use 1/2 garlic and 1/2 the butter)for 1 minute
  • dip fish in milk,then dredge in seasoned cornmeal.
  • cook until browned on both sides,about 3 minutes per side
  • if cooking in 2 batches,cook remainder of garlic for 1 minute in the remaining butter, to start the second batch
  • serve with fresh lemon quarters,green salad and crusty bread.
