Banana Bread

This recipe is about 40+ years old, it's from the first editiion Woman's Day Encyclopedia of Cookery. I've been using this recipe for years and haven't found one I like better yet! Ingredients
- ½ cup oil shopping list
- 1 Cup sugar shopping list
- 2 eggs, beaten shopping list
- 3 ripe bananas, mashed shopping list
- 2 Cups flour shopping list
- 1 tsp soda shopping list
- ½ tsp powder shopping list
- ½ salt shopping list
- 3 tbl milk shopping list
- ½ tsp vanilla shopping list
- 1 tsp lemon juice shopping list
- ½ cup nuts, optional shopping list
How to make it
- Beat oil and sugar together. Add eggs and banana pulp and mix well
- Add sifted dry ingredients, milk, and vanilla, mix well and stir in nuts if using.
- Pour into a prepared loaf pan and bake at 350 until toothpick inserted in center comes out clean
- Cool well, wrap and store overnight before cutting (yeah, THAT’LL happen)
