Ingredients
- 2 Tbs. olive oil shopping list
- 1 small onion-chopped shopping list
- 1 medium sweetpotato or yam-chopped shopping list
- 1 cup red lentils shopping list
- 1 large vegetable stock cube-crushed shopping list
- 3 1/4 cups of water shopping list
- 1/2 cup of finely chopped ham shopping list
How to make it
- heat oil in a large sauce pan over medium heat
- cook onions,stirring, until soft-not browned
- add remaining ingredients,except ham,
- increase heat to high and bring to a boil
- reduce heat to low and cover and simmer for 20 minutes,stirring occasionaly,until potato is soft
- transfer mixture to a blender or food processor and blend until smooth
- return to pan and add ham,heat up and serve
