Minestrone Soup

- 2 carrots, peeled and chopped small shopping list
- 2 celery ribs, chopped small shopping list
- 1 zucchini, chopped small shopping list
- 1 small yellow onion, chopped shopping list
- 2-3 mushrooms (crimini or button), diced shopping list
- 2 cloves garlic, minced shopping list
- 1 (16 oz.) can diced tomatoes shopping list
- 1/2 (16 oz) can garbonzo or light red kidney beans, drained shopping list
- 1 qt chicken or vegetable broth shopping list
- 1/2 handful fresh parsley, chopped shopping list
- 1 tsp. dried basil shopping list
- 1 tsp. dried thyme shopping list
- 1/2 tsp. dried rosemary shopping list
- 2 bay leaves shopping list
- salt and pepper to taste shopping list
- 1/2 C. small dried pasta (shells, stars, etc.) shopping list
How to make it
- Heat a 6 qt. pot over medium heat.
- Drizzle in some olive oil and add in carrots, celery, onion, zucchini and mushrooms. Cook until tender.
- Add garlic cook 1 minute more.
- Add in tomatoes, beans, stock and all seasonings. (Add in water if needed)
- Bring to a boil. Cover and simmer for 30 minutes.
- Add in pasta and cook at a boil for 10 minutes.
