Espresso Ice Cream Pie

This is a wonderful dessert for coffee lovers
Ingredients
- 1/2 cup chocolate covered espresso beans shopping list
- 4 cups coffee ice cream shopping list
- 1 prepared chocolate crumb pie crust shopping list
- caramel sauce shopping list
How to make it
- Blend expresso beans in blender until finely chopped
- Add ice cream and blend until smooth
- Spoon mixture into pie crust
- Cover and freeze about 2 hours
- Drizzle with caramel sauce
- Variation: Before putting on caramel sauce, I sometimes top with whipped topping then drizzle the caramel
