stuffed acorn squash

- 2 medium acorn squash shopping list
- 1 pound pork sausage shopping list
- 1/2 cuup chopped onion shopping list
- 1 egg shopping list
- 2 T milk shopping list
- 1 cup chopped spinach, finely chopped shopping list
- 1 1/2 cup soft bread crumbs shopping list
- 1/2 cup dried cranberries shopping list
How to make it
- cut squash in half; remove seeds
- place squash cut side down in microwave dish
- cover and microwave on high 10-12 minutes or until tender
- crumble sausage in skillet, add onion. cook over medium heat until meat is no loner pink, drain.
- in a bowl, beat egg and milk, stir in spinach, crumbs, cranberries, and sausage.
- turn squash cut side up.
- stuff with sausage mixture. cover and microwave on high 2 -3 minutes or until heated through.
- (I like to put them in the oven, and bake at 350 degrees along side of the meat dish I have in the oven)
