How to make it

  • Spray muffin tins all over the baking surface (you are making huge muffins) and place liners in the cups
  • Mix all ingredients in bowl until just moistened, lumps are OK
  • Fill muffin tins heaping full
  • Bake at 350 degrees for 20-30 minutes
  • Serve hot
  • Hint: if you want to double the recipe so you can make them a few at a time, the batter holds very well refrigerated, covered for two to three days.
