Pecan Pie Muffins

- 2 cups packed brown sugar shopping list
- 2 cups flour shopping list
- 1 cup chopped pecans shopping list
- 2 eggs shopping list
- 2 sticks of melted butter (not margarine) shopping list
How to make it
- Spray muffin tins all over the baking surface (you are making huge muffins) and place liners in the cups
- Mix all ingredients in bowl until just moistened, lumps are OK
- Fill muffin tins heaping full
- Bake at 350 degrees for 20-30 minutes
- Serve hot
- Hint: if you want to double the recipe so you can make them a few at a time, the batter holds very well refrigerated, covered for two to three days.
