twice baked onion potatoes

- 4 large baking potatoes shopping list
- 1 pound of sliced bacon chopped shopping list
- 1 to 1 and 1/2 cups finely chopped onion shopping list
- 1/2 cup sour cream shopping list
- 2 to 3 tablespoons milk shopping list
- 1 cup diced American cheese shopping list
- 1/2 cup shredded chedder cheese shopping list
- 4green onions finely sliced shopping list
How to make it
- preheat oven to 400 degrees
- bake potaotes for one hour or until tender
- while potatoes are baking cook the bacon in a skillet until crisp
- remove bacon from skillet to paper towels
- drain drippings reserving 1 tablespoon
- in drippings saute onions until tender and set aside
- when potaoes cool enough to handle cut in half lenghtwise
- scoop out pulp leaving about a 1/8 inch shell
- in a bowl beat the potato pulp sour cream and milk until creamy
- stir in the onions american cheese and 1 cup of the bacon
- spoon mixture bake into the shells
- place on a baking sheet and return to the oven for 25 minutes
- remove from oven and sprinkle on the cheddar cheese remaining bacon and green onion slices
- return to the oven just until the cheddar cheese is nicely melted
