Black Bean Pottage

- 1 lb. dried black beans shopping list
- 8 C. water shopping list
- 2/3 C. olive oil shopping list
- 6 garlic cloves-crushed shopping list
- 2 onions chopped shopping list
- 4-6 sweet chili peppers (Anaheim or Hungarian)-seeded and chopped shopping list
- 4 t. salt shopping list
- 1/4 t. pepper shopping list
- 1/4 t. oregano shopping list
- 1/4 t. ground cumin shopping list
- 2 T. sugar shopping list
- 2 bay leaves shopping list
- 1 1/2 T. vinegar shopping list
How to make it
- 1. Pick over beans, rinse well, soak overnight in at least 1 qt. of water
- 2. Drain beans, rinse thourghly several times and drain again. Place in kettle, cover with 1 qt. of water, bring to a rapid boil, reduce heat to medium, cover and cook for one hour.
- 3. In skillet heat oil, add garlic,, onions and sweet chilis, saute for 10 minutes.
- 4. Add 1 C. of boiled black beans that have been mashed to the skillet. Then add the 'skillet mixture' to the beans that have been simmering.
- 5. Add all the seasonings that are listed to the beans and cover and boil one hour- medium heat.
- 6. Add vinegar to beans, cover and cook for another hour.
- 7. After the third hour of cooking is finished uncover and let the beans cook until thickened.
