Beer Puffs wth Corned Beef Filling

- Puffs: shopping list
- 1 cup beer shopping list
- 1/4 pound butter shopping list
- 1 cup all-purpose flour shopping list
- 1/2 teaspoon salt shopping list
- 4 large eggs shopping list
- Filling: shopping list
- 2 cups fine chopped deli corned beef shopping list
- 2 tablespoons chopped onion shopping list
- 1 teaspoon prepared horseradish shopping list
- 2 tablespoons gourmet mustard shopping list
- 2 teaspoons mayonnaise shopping list
How to make it
- The day before is when you'll need to start these.
- In a saucepan, bring beer and butter to a boil.
- When butter is melted, add flour and salt.
- Cook over low heat, stirring constantly, until the mixture pulls away from the sides of the pan.
- Remove from heat.
- Preheat oven to 450°.
- Beat eggs into beer-flour mixture, one at a time, until dough is shiny.
- Drop by teaspoonsful about 1-inch apart on a lightly greased cookie sheet.
- Bake 10 minutes.
- Reduce oven temperature to 350° and bake an additional 10 minutes.
- Remove from oven and let cool.
- Split each puff with scissors and refrigerate until the next day.
- Filling, also done the day before:
- In a bowl, combine corned beef, onion, horseradish, mustard and mayonnaise.
- Mix until well blended.
- Cover and refrigerate overnight.
- When ready, fill puffs with filling, place on platter and serve.
- They will go quickly!!!!!
