How to make it

  • First you can peel/devein the shrimp.
  • Dry the shrimp with a dish towel.
  • Now mix the flour, cornstarch, salt and pepper in a bowl.
  • Then add in oil and the ice water to the dry ingredients.
  • Next stir.
  • Next you can heat the oil in medium flame in a skillet.
  • Now dip the shrimp in the batter, rolling each shrimp in the coconut.
  • The shrimp needs to fry for approx. 4 minutes, or until lightly browned.
  • Don't overcook!
  • Next put the shrimp in a baking dish and bake at approx. 300 degrees for about 5-7 minutes to complete cooking.
  • Finally, you can combine the marmalade, Dijon mustard, honey and Tabasco making the sauce and serve with the shrimp.
