Homemade Cheese Puffs Supreme

Another one of mom's cocktail nibbles. NO day-glow orange cheese puff for her, just light puffy cheesy nibbles that worked well with a martini and some smoked almonds. Her standard before dinner nibbles. Nothing to kill the appetite during cocktail hour.
Ingredients
- 2 egg whites, stiffly beaten shopping list
- 3 oz. of cream cheese, finest kind, softened shopping list
- 1/4 lb. of very sharp cheddar cheese, grated (white variety) shopping list
- 1 stick of butter shopping list
- 1 loaf of unsliced bread shopping list
How to make it
- Remove crusts and slice bread into 1 inch cubes. Melt cheeses and butter in top of double broiler. Stir vigorously until melted.
- Remove from heat and fold in egg whites.
- Spear bread cubes and dip into mixture.
- Shake off excess. Chill overnight on greased cookie sheet and sprinkle very lightly with paprika.
- Bake 10-12 minutes at 400 degrees F.
- Mom's note on the card. "Out of this world, freezes well."
