Greek Seafood Delight

- Greek Baked Fish shopping list
- Serves 4-6 shopping list
- 2 lbs of fresh fish (grouper, sea bass, or mahi-mahi filets) shopping list
- 6 plum tomatoes diced shopping list
- 1 large onion, thinly sliced shopping list
- 1 cup kalamata olives, pitted and halved shopping list
- 1 tablespoon of oregano shopping list
- 4 cups of fresh spinach or other greens shopping list
- 5 cloves garlic, minced shopping list
- 1/2 teaspoon sugar shopping list
- 1 red bell pepper, seeded and diced shopping list
- 1 cup crumbled feta cheese shopping list
- 3/4 cup white wine shopping list
- 1/2 cup olive oil shopping list
- Lemon wedges shopping list
- Salt and Pepper to taste shopping list
How to make it
- Preheat oven to 350F.
- Heat 1 tablespoon of olive oil in a skillet over medium high heat and sauté the onions until tender – about 5 minutes. Add the garlic and sauté until fragrant, about a minute.
- Add the diced tomatoes and sugar to the pan and sauté until most of the liquid is absorbed. Remove from heat and set aside
- Place the greens on the bottom of a non-reactive baking pan or ceramic dish.
- Place the fish on top of the greens, folding under the thin end of the filet so you have an even thickness of fish. Season lightly with salt, pepper, and oregano.
- Combine all the remaining ingredients, including the (tomatoes, olives, bell pepper, and feta cheese) and distribute on top of fish.
- Pour the wine and olive oil over the fish and bake for about 30-40 minutes, depending on the thickness of the fish or until the fish starts to flake. Watch carefully.
- Serve with lemon wedges and Greek potatoes
