Brined Pork Chops

- 3 tbs of coarse salt or 2 1/2 tbs table salt shopping list
- 1/2 tsp thyme shopping list
- 1 tbs maple syrup, optional shopping list
- 3 cups water, divided shopping list
- 1 bay leaf shopping list
- 3 cloves garlic, micro planed or finely chopped shopping list
- 1/2 tsp black peppercorns, optional shopping list
- 3 pork chops, at least 1 inch thick shopping list
How to make it
- Add 1 cup of water to a pot and bring to a boil, add the salt and stir to dissolve.
- In a glass dish add the other two cups of water, add the salted water and allow to cool slightly.
- Add all of the other ingredients except the pork and stir.
- When the water is room temp. add the pork chops and turn to coat.
- Refrigerate for a min. of 12 hours, preferably overnight.
- Remove from the fridge one hour before grilling. Rinse well and pat dry.
- Sear the chops well then turn the flame to low and continue to cook until the internal temp. reaches 140.
- Tent for five minutes.
