Fat Free Brocco-Tater Stew

- 3 medium white onions, diced shopping list
- 6 garlic cloves, crushed shopping list
- 3 medium waxy potatoes, diced shopping list
- 1 tbsp. oregano shopping list
- ¼ tsp cumin shopping list
- 1/8 tsp cayenne pepper shopping list
- 2 lbs. broccoli, cut into bite-size pieces, stems julienned shopping list
- 28 oz. can crushed tomatoes shopping list
How to make it
- Heat a large saucepan over medium-high.
- Add onions and a dash of water, sauté until onions are beginning to soften.
- Add garlic, oregano, cumin and cayenne, cook, stirring, until fragrant.
- Add the potatoes with another little dash of water, cover, and cook for about another 10 minutes until the potato cubes are tender, stirring occasionally to prevent sticking.
- When the potatoes are tender, add the broccoli and crushed tomatoes, mix well.
- Cover, and cook 20 minutes, stirring often.
